Uruguayan Faba Bean Salad

Can’t find faba beans at the grocery store? Swap them for lima beans or chickpeas in this quick and easy salad.

Ingredients

  • 3 cups (750 mL) canned faba beans, drained & rinsed
  • 1 medium tomato, chopped
  • 1/4 cup (50 mL) fresh chopped parsley
  • 3 Tbsp (45 mL) red wine vinegar
  • 2 Tbsp (30 mL) olive oil
  • 1 tsp (5 mL) dried oregano
  • 1/2 tsp (2 mL) crushed red pepper
  • 1/2 tsp (2 mL) black pepper
  • 1/4 tsp (1 mL) salt

Directions

In a medium-sized bowl, combine all ingredients and toss gently. Refrigerate until ready to serve.
