Pea Butter Snack Bites

A tasty, peanut-free snack for kids and adults alike!

Ingredients

  • 1 cup (250 mL) pea butter
  • 1/2 cup (125 mL) honey
  • 1/2 tsp (2 mL) cinnamon
  • 1/2 tsp (2 mL) vanilla
  • 1 1/4 cups (300 mL) oatmeal, dry
  • 1/2 cup (125 mL) shredded coconut
  • 1/2 cup (125 mL) mini chocolate chips

Directions

In a bowl, mix together pea butter, honey, cinnamon and vanilla until blended. Stir in oatmeal, coconut and mini chocolate chips. Refrigerate for 10 minutes. Take out of the fridge and roll into 36 (1-inch/2.5 cm) balls, using about 1 Tbsp (15 mL) per ball.
